I will admit to you that this Cheap Eats was fun! I gave my 14 year old sous chef the blender, some ingredients, and said, "Create a flavorful sauce to drizzle over this dish." He did a great job!
This whole recipe adventure began because we had one large sweet potato, which needed to be used up. I diced it, threw it in a pan, and called for my assistant.
I told him that we had 4 cups of brown rice in the fridge and this sweet potato. Supper was in 90 minutes and his job was to help me create a dish out of ingredients we had in the house! Game on!
Spicy Sweet Potato Brown Rice with Lime Avocado Sauce
Ingredients:
Spicy Sweet Potato Brown Rice:
1 medium sweet potato - about 3 cups - diced
1/2 cup onion - diced
2 cloves garlic - minced
1 tsp. no salt added spice mix (your choice)
1 tsp. chili powder
Water
1 cup canned rinsed black beans
1 cup frozen or rinsed canned corn
1 cup salsa
*Depending on how spicy you like it, you may add a few splashes of hot sauce.
4 cups plain cooked brown rice
2 chopped green onions (optional for garnish)
Avocado Lime Sauce:
1/4 tsp. cinnamon
1/4 tsp. allspice
2 Tbsp tahini
juice of 2 limes
1 tsp. hot sauce
4 avocados
1/4 tsp. garlic powder
1/2 tsp. onion powder
1 Tbsp maple syrup
1/2 tsp. Braggs aminos
Directions:
Place diced sweet potato in a pot, filled with enough water to cover potatoes. Bring to boil and cook for 15 minutes. *While the potatoes are cooking make the lime avocado sauce. Directions are below. The potatoes should be cooked, but not mushy. Remove from heat and drain water from the potatoes. Set potatoes aside.
Add a few Tbsp, of water to the saucepan - enough so that your onions and garlic don't stick. Add onion, garlic, and no-salt seasoning, cooking until the mixture is softened. Add black beans, corn, and salsa. Return the sweet potatoes to the pan. Cook until the mixture is warmed through. Pour mixture over 4 cups of warm brown rice.
Lime Avocado sauce:
Remove avocado flesh from the pit and roughly chop. Add the avocado and all other ingredients to a blender or food process. Blend or process until smooth, adding water to achieve desired consistency.
This stuff is SOOOO good, you could use it to drizzle over nearly anything and it would taste great!

Plate and drizzle avocado sauce over the top. Garnish with chopped green onions.
You may also make tacos from this recipe, using either flour or corn tortillas.

Sounds great! I would use dates in place of the maple syrup. I've opted for just whole foods and nothing processed. I'll have to try it
ReplyDeleteWhat a great idea! I would never have thought of that. We always have date syrup on hand. The ingredient label is: dates - that is all. But, in theory, it wouldn't really be any different than adding the maple syrup. Right? Both products are a byproduct of concentrating the sugars from a natural product. Just thinking this through. But, to use dates you would probably add water and then whiz or smash them in a food processor or something to pulverize them? Note the "technical language" I use: smash and pulverize. LOL! So, give me your thoughts.
