Bits and Pieces: Creating a Casserole


Welcome to my new series: "Bits and Pieces", where I show you how to make the most of what you already have in your house.  

Today, my sous chef and I take just a few ingredients and create a meal which will serve your family for two nights!  

When you live Under the Median, you need to become a master of using all the food at your disposal to feed your family nutritious meals for very little money!  You don't want to waste a single thing!  But, sometimes you open your fridge and if it's at the end of the week or the end of the month, then what is available seems a little dismal.  Today I show you what happened when I opened my fridge and found that I just a handful of items available to feed my family for two nights. 

Last Thursday, I opened my fridge and found the shelves nearly empty!  I discovered a round bowl with 6 cups of plain brown rice, a tupperware  container filled with homemade marinara sauce, 2 small yellow summer squash, a 1/2 inch thick piece of onion.  Other than that, I could only see a few stalks of celery and the remnants of a bag of carrots.  On the counter I had two small banana peppers, some Italian bread, and a couple of heads of garlic. 



We would pick up our next CSA box on Saturday morning, giving us far more meal options.  But, somehow this conglomeration of ingredients needed to be transformed into something which would feed my family for two nights!  

 So, my 14 year old sous chef and I got busy planning.  Then we made you a video!  We talk about color, texture, flavors.  We take stock of our spices and sauces.  We created this Italian layered casserole, which was both satisfying and delicious.

I use Bragg's Aminos nearly every single day!  It's a soy sauce alternative, which contains a huge number of amino acids.  It's a little high in naturally occurring sodium.  But, a little bit goes a long way.  So, you don't have to use a lot to make a dish taste delicious!
