Creamy, Oil-free, Vegan, Coconut Pineapple Dressing





The 14 year old sous chef and I wanted a creamy dressing without any added dairy or oil. We had tried some nut based ranch type recipes. But, we were in the mood for something that combined coconut and fruity flavors.

So, we set out to create a dressing that was thick enough to use as a dip and yet, contained a balance of sweet and savory, allowing it to be perfect with either fruit or vegetables.

I think we did it! I've not seen any other dressing like our recipe. The coconut flour acts as both a thickener and adds more of the tropical flavor to the finished dressing.

Ingredients: 


1 can pineapple in juice
1/2 cup hemp hearts
1/4 cup rice vinegar (plain, not seasoned or salted)
1 1/2 tsp. onion powder
1 tsp. garlic powder
1/4 cup coconut flour
1/2 tsp. cinnamon (optional)




RECIPE HACK! You should have almost exactly 1 cup of diced pineapple left over from the can of pineapple. That's just enough to use in making our Tropical Ambrosia Coleslaw



Directions: 


Drain juice from can into a bowl. This should be approximately 1 cup of juice. Pour juice into a high speed blender. Add 1 cup of pineapple chunks.

Add the remainder of ingredients, including the cinnamon if you are using it. You may want to wait until you get it all blended to see if you want to add the cinnamon note to your finished dressing. The cinnamon adds a sweet note that is best if you plan to use the dressing for fruit. If you plan to use it with veggies, then leave out the cinnamon and you'll be able to taste the vinegar a little more. Your choice.

Blend on high for 30 seconds or use the dressing function if your blender has one. You may need to blend for an additional 30 seconds to achieve a smooth consistency.





Serve as a dip with raw fruit or vegetable pieces. It also makes a great dressing for a creamy, naturally sweet coleslaw. We designed our Tropical Ambrosia Coleslaw specifically for this dressing!
