Scalloped Potatoes with Lemony White Bean Alfredo Sauce





This recipe is SO easy!

This casserole is: 

  • Creamy!
  • Flavorful!
  • A new twist on traditional scalloped potatoes!
  • Layers of sliced red potato
  • Sprinkled with diced onions and garlic
  • Sandwiched between layers of amazing lemony white bean alfredo sauce 
  • Cholesterol free
  • Dairy free
  • Egg Free
  • Gluten Free
  • Contains no added oil, salt, or sugar




Ingredients: 


2 1/2 - 3 pounds of red potatoes 
1 medium white onion - small diced
2 cloves garlic - minced 


Directions: 




Wash and slice the red potatoes. Place 1 cup of alfredo sauce in the bottom of an 8 1/2 by 11 inch pan. Add a layer of red potatoes. Sprinkle them with half of diced onion and garlic. Top with another cup of the alfredo sauce. Continue, building another identical layer of potatoes, onion, and garlic. The final layer should be the rest of the alfredo sauce. Sprinkle with smoked paprika for color if desired.


Bake at 350 degrees for 1 hour or until soft when pierced with a fork. That's it!
