This Week's CSA Box: The Last of the Season!


We just picked up our final CSA box of the growing season.  My heart is sad!  Today, I'll take one last look at the seasonal goodness and how to use it.  For the last six months, I have done research on all the various fruits and vegetables in my weekly CSA box.  I found many recipes, which I had never tried.  Some became family favorites!  Many of the recipes in this final post are my own, inspired by all the wonderful produce from Garden Spot! 


What We Got: 


 Kale - 1 bag
Mixed leaf lettuce -  1 bag
Tatsoi - 1 bag
Spaghetti Squash - 1 large
Red Kuri Squash - 1 small
Radishes - 1 nice large bunch with greens
Baking potatoes - 7 medium
Delicata squash - 1 medium Ssweet potato - 5 assorted sizes
Yellow apples - a nice bowlful
Carrots - 1 nice bunch with greens

What To Do With It:






 Here are our three favorite recipes for tatsoi, mixed lettuce, and kale!




Apple Walnut Salad with Cranberry Vinaigrette:  I repeatedly took this colorful and tasty salad to get-togethers and got lots and lots of compliments!

Tatsoi:  This is another vegetable with which I wasn't terribly familiar.  I think I had only had it one or two other times before this CSA season and then it was mixed in with several other Asian vegetable.  But, I learned that tatsoi can hold its own as a stand-alone green!  In fact, I wrote a whole post on tatsoi.  Here's a link.  I give you two recipes, 1 raw and 1 cooked.  It is absolutely wonderful both ways.  



Kale and Sweet Potato Salad with Dried Cranberries: Sometimes kale can be pretty tart.  But, this Forks over Knives creation, is the perfect combination of sweet and tart flavors!  I  doubled the dressing recipe and added about a Tbsp of real maple syrup.  It was the perfect amount for a big bowl of kale.  The whole family loved it!  https://www.forksoverknives.com/recipes/kale-sweet-potato-salad-with-dried-cranberries/#gs.Jo5xivQ




  

 Spaghetti Squash FrittersSpaghetti squash provided the inspiration for my spaghetti squash fritters.  The texture is crisp on the outside and creamy on the inside (much like baked polenta).  It calls for gluten free flour.  So, if you are paleo, it's still perfect for you!

Squash SauceI created this recipe last fall, when I had a huge variety of squash in my kitchen. I set to work creating a smooth, creamy, satisfying sauce that I could use in a variety of ways.  "Squash sauce" was born.  Although the title of the recipe is not terribly descriptive, the finished product tastes amazing and freezes fantastically!  

Oatmeal Brown Sugar Baked Apples:   This recipe was hands down an often asked for "make again"!   It was seriously easy and filled my home with the smells of autumn.  I made a double batch and the doubled filling was the perfect amount for 8 apples. 

  The Best Veggie "Big Mac" Burger with Radicchio Slaw:  I must tell you that tasted absolutely decadent!  Even if you aren't a veggie burger fan, this is mouth-watering!  The photos alone are worth heading over to the recipe on the link.  This burger uses carrot from the CSA Box. 









Freezing Reminder:




  Just a reminder that the greens on top of root vegetables are always edible.  Nearly all fruits and vegetables can also be frozen with quite good results.  I freeze many bags of produce during the CSA season.  For specific instructions and tips refer to my post on Putting Food By for Winter:  Freezing.  
 


 This is the last CSA post of the season.  But, don't leave me!  All winter long I'll be giving you tips and insights on how to find great deals on produce and use what you have in the freezer.  The season may be over, but the savings goes on!
