Sweet Corn!!!

This Week's CSA Box




Corn!!!  Glorious sweet corn!!

What's in the box?

I think we've already established that it contains a dozen ears of glorious Illinois summer sweet corn!

What else?

2 summer squash
1 head garlic
5 white onions
4 slicing tomatoes
1 pint of the sweetest cherry tomatoes that I have ever tasted!
1 pint of amazingly flavorful blueberries
1 bunch of carrots with glorious greens
1 mess of beans

For those of you under the age of 50:"mess" is a highly technical term, which immediately brings with it visions of childhood. 


Definition of: mess

(mes) noun
1. A quantity of food sufficient for one meal or for a particular occasion.


 On hot summer mornings your mother would call for you and say, "Head on out to the garden and pick me a mess of beans for supper."  




What I'm Going to do with It

1.  I tried one of the blueberries plain and I don't believe I've ever tasted such a flavorful, more vibrant blueberry in my life!  They are just begging to be put into muffins.  So, I'm using the blueberries from this week's box to make a batch of blueberry muffins.  Here's the link.  

2.  Corn, tomato, and avocado salad!  This will be a main dish salad served over salad greens with the muffins, a raw vegetable tray, and fruit for dessert.  I'm adding black beans to the salad for extra protein.  Press here for the link!  

3.  Sauteed zucchini and cherry tomatoes.  I'll use the zucchini, cherry tomatoes, and onions from this week's share for this easy and yet delicious dish.  If you want to turn it into a main dish, serve it over pasta or brown rice!  Fast, easy, and won't heat up the kitchen on a hot summer day!  

4.  How about a beefed up version of green beans amondine?  Here's a link to a great recipe that adds sausage to this tried and true favorite.  Vegans need not fear!  I'm going to use some vegan sausage and pass the cheese for those who wish to add it.  I'm serving up some of the sweet corn and a big salad with this dish and calling it supper!  Once again, we are talking quick summer meals with little hassle and little heat.
